Watecress Soup

Ingredients

  • 2 packages of watercress
  • 2 cups of defatted chicken broth
  • 1 tsp chopped parsley
  • 1/2 cup of skim milk
  • Salt and pepper
  • Soda cookie

Servings: 4 servings (4.2 ounces per serving)

Preparation

Cook the watercress in the consommé for 15 minutes or until soft. Blend with the rest of the ingredients for 30 seconds, heat and check the seasoning.
