Vegetarian Soup

Ingredients

  • 1 medium cucumber
  • 4 scallions, white part minced
  • 1-2 curry powder
  • 1 non-fat natural yogurt
  • 1/2 cup of skim milk approximately
  • Salt and pepper

Servings: 3 servings (4.2 ounces per serving)

Preparation

Peel the cucumber and grate about three-quarters. The rest is cut into sticks to decorate. Mix the grated cucumber, the minced chives, the curry, the low-fat natural yogurt with enough skim milk to give it soup consistency. Add salt and pepper. Cool and serve in a cup and decorate with the rest of the cucumber.
