Cucumber Cold Soup With Curry

Ingredients

  • 1 medium cucumber
  • 4 scallions, white part minced
  • 1-2 curry powder
  • 1 non-fat natural yogurt
  • 1/2 cup of skim milk (approximately)
  • Salt, pepper, minced parsley

Servings: 3 servings (4.2 ounces per serving)

Preparation

Peel the cucumber and grate approximately three quarters, the rest cut into small sticks to decorate. Mix the grated cucumber, minced chives, curry and nonfat plain yogurt with enough skim milk to give it soup consistency. Add salt, pepper and serve cold in chilled cups and decorate with the reserved cucumber.
