Basic Meat Broth


  • 0.73 pounds of meat with bone
  • 2 tbsp of meat extract
  • 2 liters of water
  • 1 medium chopped onion
  • 2 cloves of crushed garlic
  • 2 bay leaves
  • 1 sprig of celery with leaves
  • 1/2 cup diced carrots
  • salt and pepper

Servings: 8 servings (4.2 ounces per serving)


Start the preparation of the consommé with all the ingredients except the carrot and the celery until it boils. Reduce the heat and let cook for 1 hour more. Add the vegetables the last half hour. Remove from heat and strain. Remove all lean meat from the bones and save for other recipes. Freeze the consommé for 12 hours in order to degrease before serving. It can be served alone or with vegetables.
