Cucumber Sauce

Ingredients

  • 1 large grated cucumber
  • 1 non-fat natural yogurt
  • 1 tsp chopped parsley
  • Salt and pepper
  • 1 sprig of finely chopped dill

Servings: 4 servings (1 tablespoon per serving)

Preparation

Put the yogurt in a bowl, lightly salt, cover and place in the microwave for 1 minute; once hot, add the grated cucumber and the chopped parsley, stir well and let it cool. Serve warm with boiled fish and roasted chicken. OPTIONS: Stir 1/4 cup of orange juice with a tablespoon of white vinegar, a teaspoon of orange zest, salt, pepper. You can vary it by adding finely chopped chives, parsley or cilantro. Mix 1/4 cup of orange juice with 1/2 teaspoon of shredded dry thyme, 1/2 teaspoon of orange zest and 1/4 of white pepper. If a stronger flavor is desired, add a garlic clove finely chopped and crushed. Combine 1/4 cup of milk with 1/4 cup of cottage cheese or ricotta, a teaspoon of washed and finely chopped parsley, salt and pepper to taste. Mix 1/2 cup of plain yogurt with three tablespoons of skim milk and one tablespoon of finely chopped spearmint, to make a creamy and light dressing at the same time. Pepper to taste. To 1/2 cup of clam juice and tomato juice, add a tablespoon of orange juice, a teaspoon of chopped scallion. It is an ideal dressing for shrimp and other seafood.
