Vitel Tone

Ingredients

  • 2.2 pounds of Black Shank or Eye Round Roast
  • 1 can of 0.37 pounds of tuna in water.
  • 2 anchovy fillets (well drained from the oil).
  • 5 capers
  • 1/4 cup olive oil.
  • 1/2 glass of a good white wine
  • Salt to taste. (Do not forget that the anchovies are very salty)
  • Juice of half a lemon

Servings: 6 servings (0.40 pounds per serving)

Preparation

In a cauldron with hot oil, brown the meat until it is sealed. Drain the oil and then add all the other ingredients in the pot and let cook until the meat is tender (about 2 hours). Let it cool completely so that the meat can be cut into thin slices without falling apart. Place the sauce of the preparation in the blender and blend well to form a homogeneous sauce. To serve, wash the meat with the sauce and the lemon juice (served cold).
