Trout With Asparagus

Ingredients

  • 4 trout fillets
  • 1 tie of asparagus
  • 5 tbsp chopped scallion
  • 3.5 ounces of low-fat white cheese
  • 1 clove garlic
  • Watercress leaves to your liking
  • 1/2 lemon juice
  • salt and pepper

Servings: 4 servings (0.44 pounds per serving)

Preparation

Finely chop the garlic, chives and watercress. Add the white cheese and salt and pepper. Boil water with salt. When it reaches boiling point, toss the asparagus and cook until tender. Then strain them and take them to inverted water bath (cold water and ice cubes) to avoid cooking. Season the fillets. Cook them on a griddle, about 3 minutes each side.
