Spinach Soup

Ingredients

  • 2 finely chopped onions
  • 2 1/3 cups of defatted chicken broth
  • 2 packs of well-washed spinach
  • 1 bay leaf
  • 1 sprig of parsley
  • salt and pepper to taste
  • 1 pinch of freshly grated nutmeg
  • 1 cup natural or non-fat yogurt
  • 1 sheet of ground soda biscuit

Servings: 6 servings (4.2 ounces per serving)

Preparation

Cook the spinach in the consommé until they are well cooked. Liquify in the blender and the preparation is strained. Take it again to the fire, add the parsley and the laurel, the salt and the pepper are corrected according to your taste, the pinch of nutmeg and the yogurt are added. Let it cook for 10 minutes, remove the bay leaf and parsley and add the crushed soda biscuit until it thickens according to your preference.
