Shrimps With Foamy Sauce

Ingredients

  • 1.1 pounds of shrimps
  • 0.55 pounds of well-ripened tomatoes
  • 1 glass of champagne or other sparkling wine
  • 1 small onion
  • 1 clove garlic
  • 1/4 cup of the broth where you cooked the shrimps
  • 1 tsp chopped parsley
  • Salt and pepper to taste

Servings: 8 servings (0.27 pounds per serving)

Preparation

Clean the shrimps, cook and peel them. Wash the tomatoes and cut them into small squares. Heat the broth and blanch the onion and garlic. Add the tomato, shrimps, parsley and the foamy sauce, then add the salt, pepper and cook over a high heat for 5 minutes. Serve immediately.
