Roasted Shrimps Salad

Ingredients

  • 1/2 cup of dressing
  • 1/2 cup of lemon juice
  • 2.2 pounds of medium-sized shrimp, cleaned and broiled (31-35 units)
  • 2 red peppers, seeded and chopped
  • 1 medium thin chopped onion
  • 1 stalk of celery, chopped
  • 1 tbsp chopped coriander
  • 1 chopped lettuce

Servings: 10 servings (1 cup per serving)

Preparation

Pour the dressing and lemon juice over the shrimp into a non-metal container. Stir so that they are covered; add the other ingredients, except the lettuce and mix lightly. Cover and chill one hour to marinate. Drain and store the dressing mixture. Place the lettuce in a serving dish, cover with the shrimp mixture and sprinkle with the dressing mixture.
