Peasant-Style Lentils

Ingredients

  • 0.66 pounds of cooked lentils
  • 1 cup whole canned tomato
  • 2 tbsp of crushed natural tomato
  • 1 small onion
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1/2 tsp cumin powder

Servings: 4 servings (0.17 pounds per serving)

Preparation

Peel and chop the onion and garlic, and sauté in a casserole without oil, until the onion is soft. Then add the canned tomatoes, the crushed tomato, 1/2 glass of water and salt to taste. Bring to a boil and cook 12 minutes stirring frequently. Add the lentils previously drained and cook another 10 minutes. Let stand 15 minutes before serving.
