Duck With Orange

Ingredients

  • 1 duck
  • juice of 2 lemons
  • juice and grated 2 oranges
  • 3/4 glass of white wine
  • salt and pepper

Servings: 3 servings (0.40 pounds per serving)

Preparation

Season the duck with half the lemon juice, the orange zest, salt and pepper. Place in a roasting pan and bring to a moderate oven, moistening each time with the same cooking juice and white wine. Once the meat is cooked, cut the duck and reserve the prey. Add the remaining lemon and orange juice to the cooking sauce.
